Ingredients:
– 2 ripe avocados
– 1/4 cup diced red onion
– 1/4 cup chopped fresh cilantro
– 1-2 jalapeno pepper, seeded and minced
– 1 clove garlic, minced
– 1-2 tbsp fresh lime juice
– Salt and black pepper
Instructions:
1. Cut the avocados in half, remove the pit and scoop out the flesh into a medium-sized bowl.
2. Mash the avocado with a fork or potato masher until it is mostly smooth, but still has some texture.
3. Add the diced red onion, chopped cilantro, minced jalapeno pepper, and minced garlic to the bowl with the avocado.
4. Mix all the ingredients together well.
5. Add 1 tablespoon of lime juice and salt and black pepper to taste. Mix well and then taste. Adjust lime juice and salt and pepper as needed.
6. Cover the bowl with plastic wrap and let it chill in the refrigerator for at least 30 minutes before serving.
7. Serve with tortilla chips or as a topping for tacos or burritos.
