Teriyaki Salmon

  • 4 salmon fillets
  • 1/2 cup soy sauce
  • 1/2 cup mirin
  • 1/4 cup brown sugar
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon minced garlic
  • 1 tablespoon cornstarch
  • 1/4 cup cold water
  • 2 tablespoons vegetable oil
  • Sliced green onions, for garnish


  1. In a small saucepan, combine soy sauce, mirin, brown sugar, ginger, and garlic. Bring to a boil and then reduce heat and let simmer for about 5-7 minutes until the sauce thickens.
  2. Whisk together cornstarch and cold water until smooth. Gradually pour this mixture into the sauce, stirring constantly until the sauce thickens again.
  3. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  4. Pat dry the salmon fillets with paper towels and season with salt and pepper. Brush with vegetable oil on both sides.
  5. Place the fillets on the prepared baking sheet, and brush them with the prepared Teriyaki Sauce.
  6. Bake in the preheated oven for 12-15 minutes or until the salmon is cooked through.
  7. Garnish with sliced green onions before serving.
