Chicken Tiki Masala

Chicken Tikka Masala is a popular Indian dish that is made with marinated chicken pieces that have been grilled and then simmered in a creamy tomato-based sauce. The dish is fragrant with a hint of spice, making it perfect for those who want a little bit of heat in their meal.
Ingredients:

For the Chicken Tikka:

– 500g boneless chicken breast
– 1 cup plain yogurt
– 1 tablespoon cumin powder
– 1 tablespoon coriander powder
– 1 teaspoon turmeric
– 1 tablespoon paprika
– Salt and pepper to taste

For the Masala Sauce:

– 2 tablespoons oil
– 1 onion, finely chopped
– 4 garlic cloves, minced
– 1 tablespoon ginger, grated
– 1 tablespoon cumin powder
– 1 tablespoon coriander powder
– 1 teaspoon turmeric
– 1 tablespoon garam masala
– 400 g canned tomatoes
– 1/2 cup heavy cream
– Salt and pepper to taste

Instructions:

1. Cut the chicken breasts into bite-sized pieces.

2. In a bowl, whisk together the yogurt, cumin powder, coriander powder, turmeric, paprika, salt, and pepper until well combined.

3. Add in the chicken pieces and mix well, making sure that the chicken is coated in the marinade. Cover the bowl and refrigerate for at least 1 hour or up to overnight.

4. Preheat your grill to high heat. Thread the chicken pieces onto skewers and grill for 5-7 minutes on each side until cooked through.

5. In a large saucepan, heat the oil over medium heat. Add in the onions and fry for 5 minutes until softened.

6. Add in the garlic and ginger and cook for another minute until fragrant.

7. Add in the cumin powder, coriander powder, turmeric, and garam masala. Fry for 1 minute until the spices are fragrant.

8. Add in the canned tomatoes and cook for another 5-7 minutes until the sauce has thickened.

9. Reduce the heat to low and add in the grilled chicken pieces. Let the chicken simmer in the sauce for 5-7 minutes until heated through.

10. Pour in the heavy cream and stir until well combined. Season with salt and pepper to taste.

11. Serve the chicken tikka masala with naan bread and basmati rice. Garnish with fresh coriander leaves. Enjoy!
