Chicken Parmesan

4 boneless, skinless chicken breasts
1 cup all-purpose flour
2 large eggs, beaten
2 cups Italian seasoned breadcrumbs
1/2 cup grated Parmesan cheese
Salt and black pepper to taste
1/4 cup vegetable oil
2 cups tomato sauce
2 cups shredded mozzarella cheese
Fresh basil leaves for garnish


Preheat your oven to 375°F (190°C).

Place the flour in a shallow dish, and season with salt and black pepper. Place the beaten eggs in a second shallow dish. In a third shallow dish, mix together the breadcrumbs and grated Parmesan cheese.

Dredge each chicken breast in the flour, shaking off any excess. Dip the chicken into the beaten eggs, then coat in the breadcrumb mixture, pressing the breadcrumbs onto the chicken to adhere.

Heat the vegetable oil in a large skillet over medium-high heat. Once the oil is hot, add the breaded chicken and cook for 3-4 minutes on each side, until golden brown.

Transfer the chicken to a baking dish and top each chicken breast with tomato sauce and shredded mozzarella cheese.

Bake the chicken in the preheated oven for 20-25 minutes, or until the chicken is fully cooked and the cheese is melted and bubbly.

Remove the baking dish from the oven and let it cool for a few minutes. Garnish with fresh basil leaves.
